Are you ready for another rousing edition of What I Ate Wednesday? It’s very exciting stuff, I know. I’ll try to keep you entertained with some witty banter or barring that, foul jokes.
While the name of the post is what I ate Wednesday, it’s really my Tuesday eats. See – I’m already a liar (my jokes probably won’t be funny either) but sacrifices must be made in order to meet the Wednesday publishing deadline. The idea for the daily food rundown comes from Jenn at peas and crayons, where you can check out a day’s eats from a whole host of other folks. I’m not sure how else to explain it other than it’s a thing in the blogging world. Who knew?
Today has been another fun filled eating frenzy kind of day because I’m trying to make up for those days when I was too sick to eat more than a small meal or two. Plus I need something to show for this WIAW. Gotta make sure I can hang in the blogosphere.
No surprises here but my day started with some coffee and a Strawberry Banana Smoothie. I really don’t think there’s a more perfect combo. For my smoothies, I mix a cup or so of ice (skip the ice if you’re using frozen fruit), a banana, some strawberries (about half a quart) and a little bit of pineapple juice. If you like your smoothies a tad sweeter, you can always add a teaspoon of honey. After a couple of hours, when my stomach finally woke up, I snacked on some energy bites and then a banana before hitting the gym. I was smart and did the Elliptical again (3.5 miles today), but I plan to go back to spinning on Thursday. Just try to stop me (really please don’t).
Breakfast was a little light, but I was particularly buried this morning at work, so I didn’t have much time to eat anything. At least not anything which required utensils. I did a better job of eating after I got back from the gym though. I had a hard-boiled egg, so I can turn into a beefcake. No protein powder here; just give me the real deal. Au natural baby.
For my main course, I had gnocchi in a pesto sauce courtesy of Nature’s Bin. Their prepared meals are the bomb (so 90’s but I don’t know any better); I take them almost daily for lunch, saving myself time and money, and they’re way more satisfying than your typical frozen dinner. They’re not frozen for one, and they are made fresh daily using local produce and ingredients when possible. I heart them.
For my afternoon snack, I had some raw sugar snap peas courtesy of our CSA share, week 3. Honestly, these were so good, I plan to eat the rest the same way. I’m not even going to try to cook them. They are sweet and crisp and refreshing. I’m not alone here either. I force-fed some of my co-workers (eat dammit eat), and they all agreed. There is something about the produce from our CSA where everything just tastes better and fresher. It helps the produce is picked the same day we get it. It’s been sun ripened, and it’s ready to eat. It’s the same way when you grab stuff from the local farmer’s market. It just tastes better, and these snap peas were no exception. I ate my whole bag full (stupid snack size) in minutes. I can’t wait to polish off the rest tomorrow.
I’m sure you recall the raspberries I picked from our garden yesterday. I added some blueberries (store-bought) and turned them into some whole grain pancakes. C’est magnifique. Look at my high school French lessons coming in handy. My teacher would be so proud…Voulez vous coucher avec moi…and I ruined it. Oh well, too much Shades of Grey.
The pancakes are accompanied by our leftover Parmesan Roasted Potatoes from Sunday. The darkish bits are actually purple potatoes. I saw them at the grocery store, and despite the fact they weren’t on the list, I bought them. What can I say? They looked so cute and beckoning, and I just couldn’t resist. I was hungry and my will power was low (yes for me, low will power equals purple potatoes). This was my first go around with these special little guys, and they tasted pretty much the same as regular potatoes. Except they are prettier and purplier and purple foods are very, very good for you. Basically, their health benefits include anti-aging. Need I say more….yeah I didn’t think so either. I guess I’ll see ya tomorrow then. Same bat time, same bat channel.

those gnocchi look delicious!!! I don’t think we have any fresh prepared foods like that around here.
your pancakes for dinner look great, too. I love homemade pancakes. so easy, too… I should make them all the time.
