Still Snacking

Of course, I’m still eating. I’m still snacking too. In fact, I’m all about snackage this week. Remember what I said yesterday: plethora, hangry, pumpkin crunch, Charlie Sheen…good, now that you’re all caught up.

I’ve been on my clean eating journey for just over a year and a half now, and after fifteen plus years, I finally reached my goal weight back in July. The one I gave up believing was possible. Ensue happy dance with extra exuberant jazz hands (picture Broadway on crack), so now I’m just loving life and still eating right.

Sometimes it seems like I spend the better part of my days (certainly my weekends) eating, cooking and eating some more. And I must say I feel good (“It’s a new dawn. It’s a new day. It’s a new life”). Like my shit don’t stink good. Like I’m king of the world good.

Like I need this t-shirt good.

Don’t worry, life will inevitable rise up and bitch slap me in the face (I did mention work is about to get crazy), but until then I’m going to sit back and try to enjoy my moment, and keep on snacking because food makes me happy…or at the very least, alive and mentally stable.

So shiny and pretty. Ooooh.

You can do it. Put your snack into it (I take back the mentally stable part).

These candied almonds require minimal effort (read 5 minutes or less). They are so simple my cats could make them, well if they had opposable thumbs, but you get the idea. Almonds are a great way to get protein and fiber and since they are a healthy fat (yes, it does exist), they are super satisfying. They’re a little bit crunchy, a little bit rock n roll, with just a touch of sweetness. Eat them straight up or sprinkle them into your salads. Whatever you do, you won’t be disappointed, so go make these.

They’re snack-a-licious.

The final product. Isn’t she lovely. Isn’t she wonderful.

Roasted Candied Almonds

Ingredients

  • 4 cups of whole natural almonds
  • 1 egg white (beaten)
  • 1/4 sugar (I use sugar in the raw)
  • cinnamon, to taste

Directions

  1. Preheat oven to 250 degrees.
  2. Beat egg white in medium bowl. Add almonds, sugar and cinnamon.
  3. After mixing together, spread the almonds on a greased cookie sheet and bake for one hour at 250 degrees.  Stir the almonds once halfway through.  Remove from oven and let cool.

*lack of sleep makes me especially deviant.

    The candied almonds look great. I usually just eat nuts plain, but like when they’re tossed in a salad at a restaurant. So glad you are feeling so good!!

      Thanks; it wasn’t always that way so I relish it now, and really try to focus on the happy, happy, joy, joy, especially when it’s hard to find.

    I love that t-shirt!!! Nike has the best lines lately.

    I’m one of the few people that doesn’t care of sweet nuts (weird since I make sweet PB eggs…). My favorite way to roast then is with curry for a savory-spicy Indian flavor.

      Yep, I’m a Nike girl.
      I absolutely want to try some savory nuts too (did I really just type that?!), so curry is a great idea.

    And I love your nuts too! o.O Lol BB and I got some German roasted almonds at Oktoberfest this past weekend and they were soooo good! Like, I'm-too-full-to-move-an-inch-but-hey-are-there-any-nuts-left? good! 😉
