Hi my nearest and dearest or whoever out there is creeping on me.
Did you miss me yesterday? Just in case you didn’t notice (as if), I took a day off from blogging, and while I know it was rough, somehow I think you survived without my witty banter. It was probably a little less exciting though. It’s ok, you’re allowed to say you were lost without my special brand of snarkicism (not necessarily a word, but so much more enthralling than snarky).
I mentioned it earlier this week, but work is insanely busy. I’m a man down (or a woman, if you want to get all literal about it) so my plate is extra precarious at the moment. Hence the reason I gave myself a blogging break yesterday and also the reason today’s post is going to be limited on words. I know, I know, my title today is The Wordless Edition (oops, blew that), but you didn’t expect me not to talk at all. That would be weird and how else could I acknowledge our host, Ms. Jenn, or at the very least identify the food I dropped down my gullet on Sunday. I can’t, that’s how, so limited words is what we’re dealing with today.
After you quickly scroll through my day of eats and then leave me a delightful little comment (or at the bare minimum, a snarky joke), head on over to Peas and Crayons to see what everyone else dined on.
Before we dive headfirst into the food, let’s talk liquids. On Sunday, I had my usual morning cup of joe and even indulged with an afternoon cup as well (I’m so spoiled). My water of choice, using my Aqua Zinger, of course, was Strawberry Kiwi. It’s my latest obsession, and if you still don’t own one of these Zinger’s, you really need to.
For breakfast, I gave Heather’s Coconut Banana Pancakes a whirl. I’ve never used coconut flour before so I was intrigued. I loved their all natural protein and fiber stats, and the actual texture reminded me of angel food cake. I topped my cakes with some bananas, sliced almonds, strawberries, and a dab (or really a dollop) of pure maple syrup.
Lunch was my Greek Pizzette, which is essentially the same thing as a pizza, except you give half the dough to your Hubby so he can make his own, leaving you with a mini-dough ball, or a Pizzette, as I like to call it. My sauce was chunks of garlic cloves and basil which I soaked in olive oil for hours on end. Then I topped the whole thing with artichoke hearts, feta cheese, Kalamata olives, and freshly chopped tomatoes.
Later in the day, I snacked on these Acorn Squash seeds (more to come on these in a future episode).
For dinner, I had a handful of my Rosemary Drop Biscuits and a big bowl of Cauliflower and Cheddar Cheese Soup.
It was everything I’d want in a bowl of soup and more. Too much? Yeah, I thought so too. In reality, it was good, hearty and totally satisfying. Then again, I’m partial to big bowls of soup. So that’s it for my Sunday eats; I hope you enjoyed them as much as me.
What’s your favorite soup? I think I could live on it in the winter months. Do you eat your Acorn Squash seeds, or do you just pitch them?

I tried again this fall to love roasted pumpkin seeds. But I just don’t. Into the compost they go, along with butternut, acorn, etc and in the summer, more garden surprises for me.

I used my basic recipe for Drop Biscuits: http://cleaneatsfastfeets.com/?page_id=3053 and then added some freshly chopped rosemary (I had some leftover from another recipe, so I figured why not), some cheddar cheese and some hot sauce because I was all out of jalepenos. I added a link to the Drop Biscuits above too. My bad.

Moving on… Your food looks amazing as usual. I’d like to take big bite (slurp?) of that soup!
I’ve never roasted the seeds from the squash before. Mainly because I can’t eat seeds. But I was just saying to my mom the other day that we should soak, dehydrate and grind them into flour so that we can bake with them. Roasting is a great idea too. So economical.

Fabulous looking pancakes!! I’m not that into soup (i know, weird) but veggie soup- the more veggies the better- is my favorite. I can’t stand the ones that are too salty…I end up guzzling water for hours afterwards

Everything looks delicous! I still haven’t gotten the Aqua Zinger yet. Since I’ve been having a love affair (one sided) with Amazon lately, I should just throw one in! Love the pizzette! Yum!

I found it at my grocery store, Nature’s Bin. It was mixed in with all the other flours (and bread and pancake mixes). I didn’t see it at first because it came in a cannister versus the typical clear bags.

I, for one, have been missing your snark. But it’s my own darn fault–go on vacation for a few days, and you get all sorts of behind! (Especially on a nude beach…)
I’ll suffer through a bowl of soup, as long as biscuits are involved. But I can’t say I loooove soup, even if I occasionally enjoy a good bowl. I like chew and texture–reason why I want to love smoothies/juice/soup, but just don’t. Unless I can dunk chewy things in it.

I can totally understand your texture issue. I actually like to keep some whole veggies in the soup for texture and sometimes even throw in homemade croutons for crunch.
Did you strip down on the nude beach too? I would definitely consider it, although every time I had the opportunity I’ve been with family and kept my clothes on because that would just be awkward.

You finally got some coconut flour!! AND you made my cakes! Yay…so happy! And omg, YES it DOES remind me of angel food cake! Thank you! I’ve been trying to put my finger on that texture for MONTHS! I swear even just a tablespoon added to any pancake batter makes them so much more cakey and delicious!
I need to know more about that cauliflower and cheese soup ASAP! Especially since I just bought a huge head of cauli last week with no real idea of what I plan to do with it…obviously it was on sale and that of course meant I HAD to have it! 😉
Favorite winter soup: CHILI!! Topped with chips, cheese, and a bit of Greek yogurt! Mmmmm!
I’ve been eating a TON of squash lately…acorn, pumpkin, spaghetti…and I’ve kept AND WASHED all the seeds (so proud of myself right there since I usually get too lazy to do it), but I’ve actually been enjoying them raw lately…love the chew!

Oh my gosh, I know! There are only SO many meals you can eat in a day! I think I’ve finally realized that when I say, “Wow, I want to make that”, what I really mean is, “Wow, I want YOU to make that for ME!” Lol
I am sooooo glad you liked the pancakes! And it makes me so happy that you tried coconut flour! I swear you can add it to just about any pancake and it makes it taste like cake! Or, have you tried making “coconut cream” with it? It’s one of the first things I made with it and I love it! Oh and you can make it thinner and more drizzly if you want too…great for pancakes! 😀
