After reading this post and this post on sleep habits, I opted for a few more zzz’s and slept in today. Therefore, I give you the Minimalist Edition.

Breakfast: Smoothie with Frozen Bananas, Fresh Blueberries, a Pear and Pineapple Juice.
Lunch: Veggie Stuffed Grilled Cheese Sandwich and Baked Sweet Potato Chips.
Dinner: Brown Rice and Beans with Corn, Onions and Bell Pepper.
Dessert: Scoop of Peanut Butter with Mini-Chocolate Chips.

I love grilled cheese, and you need to make that sandwich pronto, or at least while we are still in April because it’s National Grilled Cheese Month.
It’s nice to know I’m missed (at least my words anyway).

I would gladly trade sleep for a minimalist post. Unfortunately I have been sleeping rather inconsistently, so epic posts, catching up on two seasons of Glee, and reading have been higher on the accomplishment list.
I’ve been kind of obsessed with brown rice lately, and this post just makes me happy I ended up packing some for lunch. 🙂

I’m glad my minimalist approach sparked some happiness with you. I’ve got some leftover brown rice from that dinner so I think a veggie stir fry might be in order in the very near future. Although I will probably eat mine at dinner time and when it’s warm. 🙂

I love sleeping too, and I love day time naps.
I don’t usually have a lot of sweets in the house, but I always have chocolate chips and they end up being my go to sweet as a result.

Yum,y eats! My favorite dessert or sweet fix is an apple diced up and topped with cinnamon and vanilla extract so simple and so sweet just like crunchy candy bites. Those sweet potatoe chips look amazing. Sending you sweet dreams and zzz

I’m glad you think so, since your grilled cheese was the inspiration. I used some other veggies but I owe it all to you and that gorgeous picture. I’m planning on doing a post about April being National Grilled Cheese Month, so this lovely sandwich will be making a repeat appearance, and I will of course hark back to you. 🙂

That dessert looks so good! How do you stop at just one spoon? That jar is already out!

The trick is grab your spoonful of PB, put the jar away, then grab your chips and toss onto your PB spoon, put the chips away and then take you and your one heaping (if you’re only eating one, it must be heaping) spoonful into another room entirely. Park your bucket on the sofa and eat very slowly. It’s peanut butter, so you don’t really have a choice on speed anyway. If you are lazy like me, you won’t want to get up to do it all over again.

I live in a studio-ish apartment, so my bedroom/living room/kitchen are all sort of the same…maybe I could go out into the hallway!! Or into the bathroom? 😀

That would definitely make it tougher. If the PB jar and chips were anywhere in my general reach, I would totally keep going until I begged the Hubby to take it away. There would no longer be a “just one.”

Oh man – cheese (in any form) is what I miss most now that I’ve given up dairy (if I have any now I break out). My quick go to dessert! Banana cream! If I’m really short on time, keep cut up fruit on hand in my freezer.

It’s funny, since I tried to give up dairy but never managed to pass on cheese. Then slowly but surely, I incorporated some greek yogurt back into the mix and an occasional scoop or two of ice cream, so nowadays the only dairy I don’t ingest is the drinkable kind.

Oh my goodness. I would eat almost every one of those meals. Have you ever tried putting chips into your sandwich? It’s only the best thing ever. I love the crunch it gives! One of my favorite quick desserts is sunflower seed butter and mini chocolate chips on a rice cake. Yummm.

Mmm! Sweet Potato Chips! I make Butternut Squash chips 🙂 They make me so happy, until I eat too many and then get a stomach ache. Awesome. Ha! Always good going down though 😉

I actually only used one sweet potato specifically so I wouldn’t ingest them until I made myself sick. Moderation’s a bitch, but a worthwhile one.

I think they look so much more delicious pre-blend. Most of my smoothies end up being an unappetizing shade of brown or green, and the rare ones which do come out with a beautiful color never seems to translate in the photo, so I just started doing the pictures pre-blend.
Yes I did make the sweet potato chips. They are pretty tasty, but I’m still trying to perfect the cooking time. Once I’m sure I’ve mastered it, I’ll publish the recipe.

Never enough sleep, ever. Fave meal had to be an egg sandwich with a runny yolk or some strawberry oatmeal I made (breakfast rules!!) And my go-to quick and easy dessert is apple slices dipped into a cup of melted PB with a dash of cinnamon.

Yeah with three kids and school, I can imagine sleep is a luxury for you. I think you get the super mom award of the year though.

Extra sleep and yum eats sounds like a win all round :)! For the most part I get great sleep, about 7-8 hours a night. Although lately waking up has been harder and harder…good thing it’s weekend time ;)! Happy Friday!

Thanks Khushboo. I’ve been getting around 7 hours which isn’t enough for me. I think I need more along the lines of 9 hours. Crazy but true and last night I managed to sleep almost a solid 12 hours so yep, I was a little sleep deprived there.

Dude, I made sweet potato chips TWICE last week! Love love love!
I know everyone is different, and I’m not comparing myself to you or anything, but it truly amazes me how a fruit smoothie can fill you up for breakfast. I swear, if I don’t add protein powder, I don’t even feel like I had anything. By the time I finish the glass, I’m even hungrier than I was before! That being said, I love all the combos you come up with…I never think to add fruits like apples or pears.
I NEVER get enough sleep…unless medicated. Thanks to my zombie ways I never even know WHEN I’ll get sleepy so it makes it really hard to plan stuff for the next day. Womp womp. Best meal last week waaaaaas…thinking, thinking, thinking, OH GOT IT…spinach salad topped with a grilled pork burger, feta cheese, sundried tomatoes, black olives, and Greek dressing! And yeah, for the record, I had to look in my pictures to remember that…damn Alzheimer’s!

What cook time did you use on your sweet potato chips? I did mine at 200 for almost two hours.
I usually consider smoothies my “first” breakfast. They sort of get my stomach ready for my first meal. During the week, I have a smoothie before work or on my way to work and then an hour or so later, I usually have a big bowl of granola with yogurt and more fresh fruit. My second breakfast as I like to call it. And apparently, I’m a hobbit, minus the funny ears.

Shit! I could NEVER wait that long! I did like 350 for 40-ish minutes? I burnt the first batch at 400 but I can’t remember what time I took them out with the lower temp. And I even took note of it because I thought about sharing it on the blog… looks like I’ll have to make some more…damn! 😉
Haha, I like the hobbit way of eating. I’ve actually noticed that I don’t really eat “lunch” anymore…it’s more like 2-3 snacks over a few hours. Eh, whatever works! I’m a mealtime rebel! Lol
