Hey my lovely little Peeps!
Not the weird marshmallowly Easter kind either because those freak me out and always have, even before I was a healthy whole food eater. Besides, there’s something sinister about those chicks. Have you seen the way they stare? Following you with their cold hard brown dot eyes; not only is it rude, but it borders on indecent. Speaking of indecent, they’re not wearing any clothes. Going topless I could forgive, but bare chick bums make me shudder. I think you should think about that, the next time you want a Peep.
Or perhaps you should think about Sister Sledge because that’s where I was going with my opening sentence. When I say Peeps, I mean ♫ “We are Family. I got all my sisters with me.”♫ The good Peeps. The cool Peeps. The dancing Peeps. Again not to be confused with the cruel, hard and naked Easter peeps.
If you haven’t already guessed, late hours at the office last night have left me near delirious, which should be enough to stop most people from posting today, but not me. Not on a What I Ate Wednesday. Not when I diligently took pictures of all my Saturday eats. Not when I remade and ate Saturday night’s dinner, again for lunch on Sunday, so I could capture a better photo during daylight hours. Yep, I went to a lot of trouble to bring my meals to the table today, literally, so far be it from me to let a little thing like sanity derail this train. Besides, when have I ever let sanity stop me before?
Enough words already. Let’s get to the food.
Breakfast was two homemade Acorn Squash Blackberry Buttermilk Soaked Oat Muffins.
These muffins are a complete meal, especially if you’re into the whole macro thing. They’re like the Godfather of Muffins with carbs, protein and healthy fats. They have very little sugar, only the brown kind, no oil, and yet they’re dangerously and deliciously good with hidden vegetables and sweet, succulent berries. You can’t go wrong with these.
Not to one up breakfast, but lunch was my favorite meal of the day. I made an Oven Baked Potatoes and stuffed it with a few of my favorite things: a dab of butter, a dollop of sour cream, shavings of Habanero cheese, diced bell peppers, green onions, and a sprinkling of hot sauce.
I suspect it’s the Irish in me, but I will take potatoes pretty much any which way I can them. It’s important to point out that potatoes are your friends. They’re white, so they tend to get mislabeled as unhealthy carbs, but don’t be fooled, they’re not processed or refined. When it comes to the white potatoes, it’s really all about how you prepare them and what you top them with, ignoring the fact I topped mine with some yummy fats on this particular day.
If you wanted to up your veggie intake, and I’m all about more veggies, you could easily stuff these spuds with sautéed veggies: think broccoli, brussel sprouts and anything else that begins with a B. Leftover veggie stir fry; stick it in a baked potato and you’re good to go. Also, if you’re pressed for time, you could start these in the microwave and finish them off in the oven, which means you’ve got a drool worthy dinner (or lunch as the case may be) on the table in twenty minutes. Easy-peasy.
My afternoon snack was two slices of homemade Acorn Squash Strawberry Bread, alongside a cup of Hot Apple Cider with cinnamon. That would be butter on my bread because apparently I was craving all the fats on Saturday. Plus, I love butter.
Dinner was a burrito, jam-packed with refried beans, sautéed onions, peppers, Cilantro Lime Brown Rice (made last weekend), more Habanero Cheese, hot sauce, and green onions.
I’m sensing a trend here, which is interesting because earlier in the week, I was craving, and occasionally indulging, all the sweet things. It’s good to see I’ve moved on.
I also can’t wait to make another Baked Potato. I’m thinking about having veggie stir fry for dinner tonight, just so I can stuff the leftovers in a potato tomorrow. Now there’s a plan, and you know how much I love a plan.

Yes, you should hop on the baked potato train with me. So easy and delicious. You can stuff it with some corn, beans and salsa and go Southwestern with it.

Baked potatoes make a great meal-I used to load them up (healthy) and call them good in my single girl days. They had a bit of feta, some roasted peppers, salsa…now I need a potato! I’ve been craving salt lately…lots and lots of salt. Eh, I’m not mad at it.

I’m always fascinated by my cravings because I think they’re really based on something my body needs. Guess I needed a little extra fat; maybe because my skin and hair are so dry right now with the weather. The fats will certainly help.
I love feta. I could get lost in feta, especially with some summertime tomatoes and cucumbers. Yum.

Gosh, who DOESN’T love butter?! All of this looks fantastic. I was not craving anything until I read that burrito description – now I’d like some of that please and thank you. 😀 Also, because it’s been so cold out, I swear everything I make for dinner lately must be consumed from a bowl. Soup, chili, pasta – that kinda stuff!

I love baked potatoes and they are so versatile! I made chicken fajitas last week and used the leftover meat and vegetables as a potato topper…best idea ever.

Yes, potatoes! They are possibly the best way ever to use up all the bits and bobs in the crisper. (Also usually the end of the bottle of sriracha, at least at our house.) I definitley nee to bake a couple potatoes very soon.

That has been my craving lately…just bought ANOTHER 2kg bag for the next TWO days….
Now as for the baked potatoes…My two favourites are-
1. With a tuna, mayonaise, sweet corn, spring onion mix
2. CHEESE, salsa, avocado and jalapenos.
Now I want another potato and I just ate some for lunch!

Is it weird I keep saying the white potato like that? Nah…I think I’ll stick beans, corn, salsa, avocado, some cheese in my next white potato.

Omg I’ve always hated peeps too- even when I was eating garbage. Although I for some reason find peeps hilarious… this might be because my brother and sister and I would put them in the microwave and blow them up… this is probably why I find them funny & also why my mom makes me clean the microwave when I’m visiting home.

I’m drooling over that potato… and considering digging into the one I have packed for dinner right now. Seriously that’s how much I love potatoes and how good that potato looks. I think I’m in love 🙂
I’m also in love with the Habanero cheese that kept popping up throughout the day. It’s an incredible looking day of eats, and the cheese just makes it better!

Actually I’ve seen those and they’re pretty incredible. It makes sense to use them for construction purposes since they probably aren’t actual food. They probably last forever too.
Now that’s a potato. My Hubby would have loved that!!

I spent a couple of minutes looking over that acorn squash muffin recipe. It really sounds fabulous and healthy. Is the acorn squash strawberry bread of your own design too (as in, are you going to share the recipe soon?) or did you find it somewhere else?

I have a friend who stockpiles the Peeps; creeps me out, but you get your Peep on and I’ll be happy for you.
The muffins really are healthy, although I had someone ask me for a healthier alternative to whole wheat flour and buttermilk. I’m not sure they really knew what buttermilk was because it’s actually better than regular dairy, but c’est la vie.

Ok, now let’s talk about that pornorific poTAYter! Holy crap girlie! SUBMIT that shit to Foodgawker! Seriously, you don’t have to have a “recipe”…I submitted on of my sandwiches from my love affair this summer and they took it! SUB.MIT.THAT! And then make another one, wrap it up, and mail it too me…minus the habanero cheese since I’m not a huge fan of heartburn…and I’m a weenie! Ha!
Hmm, what have I noticed from my meals lately? That I eat like a bird! Seriously, I don’t know if it’s stress or what, but if I were aiming to guess (just guess now because I’m not flirting with stupidity again) at the calories, I’d say most meals are under 300ish. And then I peck a little throughout the day. Weird, but I’m just going with it for now. Hoping that I snap back soon so I can actually enjoy a full fledged meal instead of my odd and end snack plates and half-hazard excuse for breakfast…which I confess has mostly been cereal as of late. Hmm, maybe I should make some muffins. I did finally get through my little freezer stash of kabocha donuts…it’d be nice to have a little something to grab and go…and put butter on! Note to self: buy butter! 😉

I’ll add the potato to my Food Gawker list. I have a ton I need to actually send in; I figure if I spam them enough at some point, they’ll break down and accept at least one. 🙂 That’s my plan, and I’m sticking to it.
Yes, you need to buy butter and then make some muffins and then get a full meal in. Full meals are delicious.

And guess what! I DID buy butter and I’ve actually had what can be considered as ACTUAL meals over the last day or so…I even snapped some pics for WIAW tomorrow! 😀
