I don’t have an introduction for today.
I know, I know. I’m a bad blogger because I’m sure that’s why you come here day in and day out. It’s to hear me ramble on and realize there is someone else who is equally as crazy as you, although keep in mind, if they are handing out prizes, I win. Crazy plus highly competitive equals a ball of laughs and a barrel of monkeys. That’s some funny math right there, and I may need to adjust my resume or rethink my current job crunching numbers.
Oh crap. It’s What I Ate Wednesday, which means you aren’t here for my witty banter at all.
You want to see my eats.
Every single morsel consumed in a single day.
While I may not have an introduction, I do have food, and at this rodeo that probably earns me way more points, which means I’m still in the lead.
My breakfast comes by way of Farm Fresh Feasts and my CSA. It’s true my CSA ended back in December, but not before I was given a bag of red skinned potatoes, some shallots and a cabbage. Yes, I eat six-week old cabbage; don’t judge me, or at least not until you taste this because it makes six-week old cabbage taste amazing. For real, and I don’t even like cabbage. I’d eat this again though.
I give you the Breakfast Salad, comprised of sautéed cabbage and shallots, roasted red skinned potatoes and scrambled eggs. For the sake of specifics, the below dish is a serving platter and contains about four cups of cabbage, four eggs and at least six baby taters. Between the Hubby and I, we managed to put down two-thirds of the this, although we did forage through to find and finish off the eggs.
Not only did I eat my veggies for breakfast, “Thank you, Thank you,” she says while curtseying, but this meal is actually a strong contender for Laura’s Strange But Good. I am just winning all over the place; good thing too because you should see the fit I throw when I’m not. I’m only kidding; I’m not a temper tantrum type gal, aside from a few murky meltdowns, but I can and will curse a blue streak.
After ingesting 800 tons of cabbage with a side of protein, I thought I’d never be hungry again, so I opted to forgo a proper lunch. Instead I went the smoothie route with frozen strawberries, spinach, a banana, and a handful of blueberries. When it was all said and done, my cup runneth over or truly about twenty ounces.
After drinking my lunch, I went errand running, which included stops at Nature’s Bin and the Breadsmith. While at the latter, I took not one, but two samples of their Orange Chocolate Chip Dessert Bread. It was at this point, I realized I was ravenous, and I almost upended that entire sample platter into my mouth. I still kind of wish I had.
Alas, it was not meant to be, so I scurried home and quickly inhaled a Clementine with a side of Cabot’s Vermont Seriously Sharp Cheddar Cheese, which I get by the brick from Costco. Mmmm, bricks of cheese make me happy. There was at least another two slices consumed post photo.
Seeing as how I was suddenly starving (damn you smoothie for lunch), I jumped on the dinner train faster than a traveling hobo fleeing from the 5-0.
Dinner was two slices of Mediterranean Herb bread, cut into pieces and dunked into extra virgin olive oil with a mixture of seasonings. There’s four slices of bread in the picture below, two of which were shared with the Hubby. Damn, I am a good woman; still on top too.
We paired our bread with a serving of sautéed veggies on a bed of quinoa. In play we have onions, garlic, bell peppers, broccoli, cauliflower, and grape tomatoes all cooked in olive oil and topped with my own Garlic Rosemary Salt. It was veggierific. Yes, I’m making up words now; just go with it.
This is a regular sized salad or cereal bowl.
Last came dessert, which was consumer fireside: a glass of white wine and buckeye bar purchased at Nature’s Bin earlier in the day. Hence, why you shouldn’t grocery shop hungry or perhaps the real reason you should. 😉
It was perfect and a delightful ending to a delectable day.
If you could pick any meal from my above day of eats, which would it be and why?
Fran@BCDC says
How did you keep the cabbage fresh for six weeks?! I would eat it without question if it looked that good. I’m always using droopy veggies just ’cause I’m cheap!! Everything looks delicious. I love cabbage and use it all the time in sauteed veggie dishes. Have a great day, my Dear!!
Meghan says
I stuck him in the crisper drawer in the fridge and somehow he lasted. I did have to pull off the outer layer, but it was in great shape. Go figure?!
Eating 4 Balance says
I think it’s actually harder to shop when you’re not hungry! I’m always like “Nah, that doesn’t look good, I’m not hungry.” And then a few days later I have nothing to eat! Ha. So, go hungry, leave happy… And you don’t have to go back twice in one week 😉
That breakfast salad looks and sounds incredible! Besides the cabbage we have everything at home and it sounds like it wouldn’t take too long to make?
Why pick??? 🙁 Fine, I’d go with either the buckeye bars (OH…. IO) or the olive oil and bread (there is just something so good about olive oil and bread!).
Meghan says
Go hungry, leave happy. Ha, that should be their motto. You should buy rights to that phrase and sell it to grocery stores.
It didn’t take too long to make at all. The potatoes were probably the longest part, but I stuck them in the oven right at the beginning before I did anything else so it all worked out fine. It was very flavorful and very filling. Great breakfast.
OH-IO! OH-IO!
Pat says
The breakfast looks great, a good way to use the cabbage because potatoes and cabbage are a great pairing. Not vegan though, because of the eggs. It’s a good vegetarian breakfast and I think I’ll try it with a tofu scramble for a vegan twist.
Meghan says
How in the heck did I miss that??!! Oh my goodness. I’m pretty sure my brain isn’t functioning correctly anymore. Thank you for letting me know though. I really appreciate it, and I have since corrected the post.
Juli @1000lovelythings says
Your day looks very yummy! But I would choose to have your late night snack. Looks so good! I just love bars 🙂
Meghan says
Nothing wrong with bars. Their seven layer ones are amazing too: chocolate, nuts, coconut, more chocolate, mmm. I’m getting hungry just thinking about it.
Laura@fitfreshnfunny says
I’d totally pick the buckeye bar and wine. Wine wine wine. It’s not a coincidence that you can’t have wine without win.
Meghan says
Ha, ha, I like that.
The Buckeye Bar and the wine were a lovely finish to a great day.
Jen@Twenty-Something&Starving says
Although everything up there looks quite tasty – I’d pick the brick of cheese and the clementine. 😀 You somehow managed to put my two biggest pregnancy cravings into one delightful snack. I could eat cheese and clementines for daaaays.
Meghan says
I feel the same and I’m not even pregnant!!
Lauren says
Everything looks delicious, but that buckeye bar is calling my name! I may have to healthify that bad boy! 🙂
Meghan says
The Buckeye Bars are amazing. I wouldn’t change a thing about them.
Davida @ The Healthy Maven says
Take a wild guess which meal I would choose…
Buckeye bar and wine DUH!
Fun fact, my Mom went to Ohio State but has never tried a buckeye. She’s basically failed at life.
Meghan says
What?! That’s insane, and I think I might have already known that. This just means you need to have double the amount of Buckeye Bars to make up for your mom’s misstep.
Lindsay says
Cabbage, potatoes and eggs….yummmmmmmm!!!
Those sauteed veggies look delicious too. I could eat a DINNER size plate of roasted or sauteed veggies. And then snack on some more later on.
Meghan says
You and me both. The irony is a I did eat a dinner sized plate of veggies with quinoa. I had to force the Hubby to leave just enough veggies left to photograph the next day when I could use the natural light. Hence the reason I was only left with a bowlful.
In general though, me and veggies are kind of BFF’s.
Brittany says
DEAR LORD I need that buckeye bar. That looks like straight up monkey love on a plate. Yeah..THAT good!! Your bowls of wonder look amazing, right up my alley.
Meghan says
It is MONKEY LOVE on a plate. Since it’s from Nature’s Bin (Whole Food Equivalent-ish), it’s made with whole ingredients without all those icky chemicals. It’s the perfect amount of sweet and salty. You’d love it, and they make a VEGAN version too. In fact, they make a lot of vegan desserts.
Laura @ Sprint 2 the Table says
An awesome contender indeed!!! I would argue that the gas that ensues after excessive cabbage doesn’t quality as good though. 😉
If you can’t guess what my favorite part of your day is, you don’t know me at all.
Meghan says
I’ll be sure to eat a boatload of cabbage right before Blend then. 😉
The Buckeye Bar and wine. Obviously.
Amanda @ .running with spoons. says
You’re seriously going to make me choose ONE meal out of all that goodness? Can I be greedy and say I want it all? No? Fiiiiine. In that case… I’d go with the buckeye bars… IF I wasn’t allergic to freaking peanuts. But since I am… give me the bread and olive oil… but throw in some chocolate on the side? Pretty please?
Meghan says
It’s a deal. Bread, olive oil and chocolate on the side. Just for you though because I like you enough to share my chocolate.
Tara says
Hmm..all of your eats look pretty damn good, but I’d probably take your bread/quinoa veggie dinner. And the glass of wine from dessert!
Meghan says
As much as I love my Buckeye Bars, I’d probably go with the veggies too. We must be crazy huh?!
Thanks for stopping by and saying hello.
Jess @ JessieBear What Will You Wear? says
Salad for breakfast? Sign me up, that sounds rad. Also sharp cheddar cheese and buckeye bars. Ooooohhhhmmmmmmm I neeeed.
Meghan says
Yes, yes, yes you do!! To all of it, but especially the cheese.
Arman @ thebigmansworld says
What a silly silly silly question. I think ALL of them are on equal ground except the fruit smoothie. Sorry, potatoes and cheese trump fruit ALL the time.
Is it bad that I’d make your breakfast salad….for one? Yep, it’s happening this weekend and there WILL be some cheese added too. I’m thinking parmesan.
Meghan says
Don’t you dare dis my fruit smoothie. You take that back right now! Alright fine, I guess you’re entitled to your own opinion. *kicks ground.
Parmesan would be great in the Breakfast Salad. Maybe mix it in with the eggs. Yum.
Yuliya says
Yum! Your breakfast looks so good! If we buy a head of cabbage, I always find it difficult to use up the whole thing, so I’ll have to give this a shot!
Meghan says
Yes, you’ll have to try it. It used about 3/4 of the head of cabbage, so I’m actually looking forward to making a smaller batch with the rest. Hopefully this weekend.
Thanks for stopping by and saying hello.
kirsten@FarmFreshFeasts says
Thank you thank you thank you! For the salad, for linking up while I was off in sunny Florida, for demonstrating that buckeye bars and wine and amazing bread + olive oil is part of a healthy diet, for all of it. You rock!
Meghan says
Happy to do it. Thanks for The Breakfast Salad and expanding my mind as well as my palate.
Cat says
CSA’s are such a great idea, I’m seriously considering joining one over here. Aaaand I’m seriously craving cheddar cheese now. However I think your breakfast wins it for me!
Meghan says
I loved the breakfast. You should try it sometime, and you should really think about joining a CSA. I’ve done it for 3 years now, and I can’t imagine myself ever taking a year off. It’s intense, it’s fun, it forces you to get creative, it expands your culinary creativity. It’s just a win all around.
Jenn L @ Peas and Crayons says
I swear you give me bakery envy every freaking week! I want a breadsmith in my mouth. er.. in my town! I’ll trade the chickpea?
Meghan says
Just come here already and I’ll buy you all the Breadsmith your stomach can handle. Bring the chickpea.
Sarah Pie says
Can I have the sample bread? Orange and Chocolate is a truly amazing combination. If not I want dinner but mostly the bread and olive oil because those two are amazing and I know you always have awesome bread 🙂 That and I have a thing for carbs…
Meghan says
Yes it is a great flavor combo and that sample bread was delicious. I only wish they had a gluten free version for you.
Heather @ Kiss My Broccoli says
Dude, I want that plate of veggie eggie (the time when misspelling is appropriate and totally necessary (for being annoyingly cute)) delightment! I don’t care if it was made from a six MONTH old cabbage…just tear off the black parts! Ha! I totally have a quince that’s been in my fridge since December! And I plan on eating that baby…just as soon as I figure out what the hell to do with it…hence the reason why it’s still in there after three months! 😯
Always COMING out on top, aren’t you? Bahaha!
Meghan says
I actually just finished the very last of the same cabbage on Sunday…it was only eight weeks old by then. Ha!
I like being on TOP. I do mean it like that. 😉
