I think we should play a game of Let’s Pretend today.
For example, we can pretend I’m still working on my goal of writing a shorter post, which is exactly why this What I Ate Wednesday is bound to be another quick one (cough, cough).
We could pretend I didn’t leave the writing of said post until 5:15 on Wednesday morning. We could also pretend I don’t need to get to work early today, shortening my already short writing time.
We could pretend I’m very mature and didn’t spend part of my St. Patrick’s Day taking ridiculous selfies, simply so I could spam the Hubby, who was presumable studying his flash cards and not indulging in green beer.
We could pretend I didn’t spend most of Monday evening sleeping gently (more cough, coughing of the sarcastic variety) on the couch, after having consumed a few too many green beers on the Hubby’s behalf. Someone had to.
We could pretend I also didn’t spend last night watching mindless television, before embarking on a new facial regimen, which is going to take at least ten years off my complexion or perhaps just the top layer of my flesh. Time will tell.
We could pretend Oscar, my Parkour jumping kitty, isn’t whining up a storm at this very moment, begging for attention because his yellow yarn ball on a string simply isn’t cutting it.
Maybe I should stop playing pretend already and just get to the food.
Happy What I Ate Wednesday. I give you my Sunday eats.
Breakfast was a recreation of Laura’s Kabocha and Black Bean Frittata for Heather’s Meatless Mondays, except I used Acorn Squash because that’s what I had on hand. Laura’s also a self-professed substitution girl (not to be confused with a cornflake girl), so it wouldn’t have been right to play it tight to the vest, which means I also swapped the egg whites for a combination of four whole eggs and almond milk, and there might have been a chance the nutritional yeast took a back seat for some pepper jack cheese.
I ate everything you see on my plate, plus a second slice of the frittata, which speaks to it’s deliciousness, and loads more fruit.
A little later on in the day, I snacked on a sugar cookie from the Breadsmith, made with natural cranberry icing.
Lunch was a baby grilled cheddar cheese sandwich on rye bread with a clementine or two thrown in for good measure.
Dinner was my last Peas & Crayons Pumpkin Burger topped with some Chipotle Cheese and a side of Asparagus fries. Confession: the breaded and baked asparagus was only so-so. Next time I’ll stick to straight up roasting my green veggies. The Pumpkin Burgers I will happily make and eat again though.
Dessert was an unfinished glass of white wine. Oops. Oh well, in keeping with today’s theme, we could pretend I drank the whole glass.

Your frittata looks delicious, Meghan. I do need to get a cast iron skillet so I can make them, but that may wait until I get to New Mexico…one less thing to pack. But I love the idea of frittatas. The cranberry icing on the cookie sounds pretty amazing, too. Sorry I missed WIR on Monday. I promise to be back next week. Hugs!

Thanks Fran. Yep, I love my cast iron skillet. You can get the real good ones, the ones that have already been seasoned so to speak at antique stores.

I would pretend that it is a weekend during the summer, and in just minutes I will be walking outside on our deck, and jumping into the luxuriously cool pool.
I would also like to pretend that I don’t have to be somewhere in 40 minutes and instead of getting ready, I am reading blog posts.
That cranberry icing sugar cookie looks perfect. Like a grown-up version of those frosted animal cookies that came in the bags. What shape is the cookie supposed to be in? I’ve always assumed dinosaur.

Heh. Your posts always make me chuckle. If I could pretend anything right now I’d pretend to be somewhere warm with a beach…let’s just say Hawaii for s&gs…shamelessly rocking my baby bump in a bikini…while drinking some sort of delicious blended beverage with pineapple in it. We can also pretend there is rum in that beverage. 😉

One thing we have not to pretend is that your food looks absolutely delicious and I certainly suffer from severe food envy at the moment!

Thanks body. I like to eat pretty food, although don’t be food, I eat some ugly dishes too. They can be quite appealing actually.
There’s a honeymoon on the horizon though so that’s something exciting to look forward to; you’ll have a great time too.

Pretend is my favorite game. I am pretending right now to be somewhere warm and also that the clothes will not wrinkle just sitting in the dryer.

That all looks so good! Especially the asparagus…bummer it didn’t turn out as fantastic as it looks. I feel like that’s a finicky vegetable – from my experience, it really only likes to be steamed or roasted. Silly veggie.

I adore asparagus and while it was good, it wasn’t great. I think it was more due to a lack of flavor on the breading than anything else. Oh well. I gave it a whirl.

It is a dinosaur, but since I don’t really know much about them, I’m not sure what kind. Your suggestion of a stegosaurus is way better than anything I could guess, so let’s go with that.
Good pretends. Two years, huh? That’s how much more schooling the Hubby has left as well. Looks like we’re in this boat together. We can be carmudgeons together.

YES. Breading vegetables then roasting them makes them worse, in my opinion. 1. The coating all falls off, even if you douse them generally in oil and 2. It just….confuses my mouth.

Yes and yes. I also thought the breading didn’t give it nearly any flavor. It was bland, and I can’t do bland veggies.

Oh geez, if I could play pretend right now, I’d pretend that I DON’T have 2.5 hours of my shift left to work. I’d pretend that I was a frickin ACE at the whole sleep thing and know beyond a shadow of a doubt when I get home in 2.75 hours that I will sleep like a well-fed baby. And I would also pretend that I didn’t have to turn right around and do the whole work thing again tomorrow. Wait, I like this game. Let’s play more often! 😀
Also, I just have to say that that baby grilled cheese is the cutest thing ever. Hmm, maybe I’ll make one for breakfast (or whatever you call it) when I get home today! Hmm, I haven’t had rye in forever…let’s pretend that I have some waiting at the house! 😉

I love swapping flavors and seeing how it comes out. I bet the acorn squash in that frittata was delicious, although I always use the full (or more!) amount of nooch in recipes. I’m a bit addicted. 🙂
