This growing a tiny human thing is tough work.
It is definitely not for the faint of heart.
Granted you don’t get much of choice once you’re in the thick of things.
It does come with a rather large prize at the end though; one which is way better (and noisier) than those holograms in the Cracker Jack boxes. Sadly no popcorn and peanuts, although maybe I can talk to my doctors about that.
In fact, I think handing out giant Cracker Jack boxes with babies inside is a much better, safer, and significantly less painful way to deliver a child. Who’s with me? Raise your hand.*

It’s possible I’ve been watching a few too many labor videos.
It’s also possible I shed some tears while viewing the same. I blame the hormones, my mother for being small, and my CSA for showing me summer after summer the true size of a watermelon. Gulp.
Oh man, I’m suddenly feeling verklempt.
I need a moment.
The short version is pregnancy has taken a lot out of me: mentally, emotionally and most definitely physically.
There are days I do virtually nothing aside from go to the office and feed myself, and yet I am downright exhausted by the end of each day; or really noon if I’m being honest.
I understand from a fancy pants science standpoint all of my energy is being diverted right now to the Unborn Child.
All I gotta say is this baby better have super powers or be a ninja because it’s clearly doing a number on me, and I think I’m pretty bad ass. I have been known to call myself a Vanilla Gorilla with good reason, of course, tossing simple insanity aside.
All of which has nothing to do with this easy Egg Sandwich with Cheese and Chives, other than to say, it comes together quickly, without expending much energy and leaves you feeling satiated long after you’re done. The combination of whole grains, eggs, and cheese is a classic. I tossed in the chives simply so I could say I’m still eating my greens.
Now who’s with me? Raise your hand.*

- 1 whole grain English Muffin, lightly toasted*
- 2 eggs
- 1 Tbsp. Milk of choice (I use Unsweetened Almond Milk)
- 2 Tbsps. Fresh Chives or 2 tsps. dried chives
- Salt and Pepper, a pinch of each
- A pat of Butter, enough to grease your pan
- 2 slices cheese of choice, enough to cover each half of your English Muffin
- Preheat oven to 175 degrees.
- Whisk together eggs, milk, chives, salt and pepper. Whisk until bubbles form on the top.
- Melt butter (or greasing agent of choice) in a small skillet set to medium heat until hot. Pour in egg mixture and wait until eggs begin to set, a few minutes. Using a spatula, gently turn eggs to cook on all sides. The more you turn the eggs, the more scrambled they will be. I turn them minimally, so they are more dense and easier to put on the sandwich.
- While eggs are cooking, toast the English muffin. Place cheese slices on each half of your English Muffin and put in the oven on a cookie sheet for a minute or two, until cheese beings to melt.
- Remove from oven and add your egg mixture to half of the English muffin. Top with remaining muffin half.
- *Can swap with two slices of bread, a bagel or even stuff it all in a tortilla wrap.

And chives totally count as greens. They are green after all 😉

I am currently eating an egg sandwich right now, though mine doesn’t look nearly as tasty!
As for pregnancy… definitely go easy on yourself. It’s insane what growing a person will do to you mentally and physically. I remember watching labor videos ranging from your average movie version to a woman having an orgasmic labor in the woods… I call b.s. to the latter. I had two kids and there was no way in hell some meditation and breathing was going to get me into an orgasmic state.

You are such a great writer!!! As you know, I’ve had a bazillion kids travel through my nether bits and out of all the kazillion pregnancy books I’ve read, the only one that helped me with labour and delivery was Dr. Sears’ “The Birth Book.” Now, these guys are hippie doctors that encourage breastfeeding right until the child’s mid-30s. HA. No. But close. And they encourage baby-wearing and co-sleeping (Callum is sick and slept with us last night–which means HE slept and kicked the crap out of my ribcage for 6 hours straight). But if you can get past all that stuff, then the imagery and skills they suggest for labour was a huge lifesaver for me. Eggs and cheese are a close second.

Let me just say that an egg sandwich has EVERYTHING to do with being pregnant because I craved them like whoa when I was with (each) child. Egg sandwiches with cheese and bacon on bagels, to be specific, but any egg and cheese sandwich would’ve worked. That plus grilled cheese with tomato and I was a happy pregnant lady! This looks so good!

I’ve got 2 kids and had 2 positive birth stories. I didn’t actually labor for #1, he was a scheduled C/S due to the whole Spina Bifida thing and the desire not to make that any worse than it already was, but still–I got to hold him a couple of days later, feed him, etc, and eventually I brought home a baby. Eventually. #2 I totally labored, fairly happily while I was awake, too. (I was kind of a dingbat while in labor.) Hell, I was pushing in the shower “ooh! I think I just pushed! ooh! I definitely pushed! I’d better get out of the shower and get someone!” . Got to hold her right away, feed her, etc.
From my personal and professional experience, it is a crapshoot so don’t even bother with a birth plan because you may end up chucking it out the window and if you’re not going to be OK with that you shouldn’t write one in the first place. Communicating with your providers, being able to relax and not fight your body, and getting as much info about what to expect in the place you’re having your kid (communication is so important) will help a ton.
Oh and the sandwich looks yummy. I’m telling you, when I realized how nurturing a fried egg sandwich is (while fixing one for my bro upon his return from a year in Iraq, and another one after a year in Afghanistan, and then ones I’ve fixed for my newly-returned spouse) I could almost say it’s the perfect comfort sandwich.

How are you watching those videos?!! And WHY! I’d seriously ban myself from them because I’m a firm believer in the whole “ignorance is bliss,” thing, and I’m pretty sure that if I knew how the whole thing actually worked, I’d get my tubes tied tomorrow… Which is basically to say that everything is going to be fine and your delivery will be as easy as slicing a hot knife through butter. I probably could have chosen some better imagery, eh? But… I’m echoing Luce, here — love you!!

My health care plan sent me all these education videos to watch so I did. I had no idea what they were about until I clicked the little link. Yeah so the labor one was particularly painful although I did find the one on breastfeeding super informative. Maybe I should just stick to the boobs. 🙂

I’m not saying I’m above fast food – a Harvey’s burger and McDonald’s McFlurry are two of life’s finest pleasures – but I honestly can’t stomach McMuffins. I’d take this version any day though!

Exactly right. It’s so simple to make too, which is of course why I love it. It’d also be super easy to add a wedge of sausage or a couple pieces of bacon if one was so inclined.

No need to worry – if I can give birth, you can, with ease. I recall being in labor on the way to the hospital on the phone with my dad who was trying to tell me I would be fine. at which point I responded, really? have you ever squeezed a watermelon out of you? Out of the something the size of a lemon? I really said that lol and meant it. But I did it and lived to tell about it. I was quite the wimp back then too. Aren’t you glad you have me to leave these kinds of comments each day during your pregnancy 🙂
