WIAW: The Making An Effort Edition

Back to back posts. Who am I?

Yes, there are days I astound even myself. Aside from being truly magnificent, also known as ultra ambitious and clearly modest, I’m really here to host What I Ate Wednesday today, your favorite foodie link up, where we showcase a day of eats in our daily lives.

C’mon, sing it with me. You know you want to.

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Speaking of fun filled link ups, I’ve decided to do a little self-pimping because it goes hand in hand with my humbleness; obviously. Besides, y’all are link up party people like me, so you need this kind of information in your life, if only so we can sing to one another.

I’m resurrecting an oldie, but goodie, the Week In Review. It’s a link up for list lovers who want to pat themselves on the back and toot their own horns. It’s a virtual To Do list where we forget about all the things which still need doing and instead celebrate the ones we did manage to complete. “Look to my coming, at first light, on the fifth day. At dawn, look to the East,” which shall now be dubbed Monday, October 19th. Do not tell Tolkien about my little revision, and I hope to see you there.

Onto the What I Ate Wednesday shenanigans.

I give you the Sunday before last where I actually made a real effort to up my nutrient intake, which is in no way related to the pizza I ate for dinner for three straight nights, or maybe it is. Either way, I deliberately tried to eat all the fruits, veggies, vitamins, minerals and nutrients.

First Breakfast

 A not pictured glass of water, a mug of warm lemon water and a vat of coffee, followed a couple hours later by a fruit filled smoothie with an extra does of kale.

Pineapple, Kale, Strawberry, Banana Smoothie

Second Breastfast/Lunch

Apple Pie Pancakes. They were out of this world, which means I intend to share the recipe with you next week.

Apple Pie Pancakes

Snackage

A bunch of grapes and a slice of Greek Yogurt Banana Bread covered in cream cheese.

Dinner

A Spinach Salad with all the toppings and a side of Pesto and Parmesan Baked Eggplant Chips. I tweaked this recipe for the latter.

    Apple pie pancakes sound out of control- how long do we need to wait for the recipe! Screw pancakes, now that’s what you calling making the most of Fall produce! If I’m lacking in nutrients, nothing like a one-pan stir fry to help i.e. loads of veggies with some kind of grain (usually brown rice) and some kind of protein (eggs if I’m feeling lazy). Cream cheese on banana bread sounds epic…even more so than peanut butter which says a lot ;)!

    That eggplant. Looks and sounds delicious. I love eggplant AND pesto. Never had them together!
    When I need nutrients, I opt for nut butters (like almond butter on an apple). Or something hearty like spinach with eggs and sweet potatoes – perhaps as a hash. Yum!

      Ahhh the lemon water! That’s awesome. Tell me, can you feel a difference? It’s supposed to be great for your skin, for energy, for releasing toxins, for digestion, so many things…. have you noticed any changes?

      I initially didn’t but when I ran out of lemons for a couple days after weeks and weeks of drinking the stuff, I could tell the difference almost immediately.

    Pizza for three nights in a row sonds amazing. Sometimes you need it and then you get in your veggies the next day. We had pizza two days last weekend and we just topped with with all the veggies! #balace 😉

      The pizza for dinner thing was because the Hubby ordered me an entire large pizza for myself. I came from work and there it was. It took me three days to eat the entire thing. 🙂

    HMmm… go-to meal when I’m trying to up the nutrients… I guess maybe my burrito bowls? Or everything but the kitchen sink stir fries? I just toss a bunch of veggies in there and call it good. Or I’ll have whatever it is I’m wanting to have with a big salad on the side. Which is why it isn’t rare to see me eating cereal and salad for dinner 😆 Please stock your pantry for next week 😛

    excellent, yes… excellent…… i see your nutrient smoothie and i raise you a super green pesto! but you may win with your hand of baked eggplant. dangit. that eggplant looks tasty, i made baked stuffed shrooms last night and the joyful flavors are still lingering. my remaining cards are looking good though, i just threw an entire shrub in my big witch’s cauldron to eat for later. bubble, bubble, bubble.
    and oh yes, i have jumped back on my happy pesto train again. it’s my current favorite way to get in UBER amounts of greens in one bowl and pump up the flavor of whatever food i put it on. it makes everything good. this time was kale, cilantro, mint, basil, lime, pumpkin seeds, EVOO…. and some glitter. it’s ridonky donk. it’s like green pate. it’s like veggie crack. it’s like…. mmm.

    I need that fruity kale smoothie. Looks delicious! I usually drink smoothies in the morning too for an extra nutrient boost.
