I’ve been meaning to share this recipe for months now.
Oops, my bad.
I have no one to blame really but my veggies.
Yeah, I hold those suckers accountable. Only a short time ago, I was up to my eyeballs in produce and as much as I wanted to share this granola recipe, I knew the veggies had to come first. Certainly while they were still in season, so week after week, the granola got bumped. It wasn’t all in vain though, since I gave you a Hearty Vegetable Soup with Roasted Tomatoes, a Sweet & Salty Pumpkin Cranberry Trail Mix, and Apple Pie Pancakes with Warm Maple Syrup, pretending of course apples are veggies.
They totally aren’t. It’ll be our little secret.
Thankfully, granola is a forgiving sort, which I appreciate and value, especially in my baked goods. It’s also not one to hold a grudge. I puffy heart granola.
I’d be willing to bet you could give this granola to any chocoholic out there, and they’d forgive all manner of improper conduct, wash away your sins so to speak. In fact, I’m gifting a batch to my local minister this week. Maybe he’ll ease up on those Our Fathers. Just kidding, I’m not the religious type, and I would totally bribe a priest if the cause was just. My philosophy draws strictly from the Do Unto Others thing and the Love Your Neighbor bit and I’m good with that.
So why am I talking about religion then? Because this granola is heavenly, a transcendental experience, if you will.
The bite of the cocoa powder coupled with the sweetened coconut and chocolate chips complement one another perfectly. It’s delightful and desserty, and if you want to eat it for breakfast, I’d totally understand.
The Hubby actually shared an unfinished version, even though he went against express orders to do so, with some of his coworkers. They declared it fantastic.
It was still missing the chocolate chips because a certain someone had polished off the rest of the bag when I wasn’t looking, and yes, he’s lucky to be alive. It’s that whole Do Unto Others thing. It crops up at the most inopportune times.
Whatever your religious beliefs, do yourself a favor and make this granola. You’ll be transported to the heavens, and if you’re lucky, all your sins forgiven.*
*Disclaimer: the last bit is completely fictional. I cannot speak for God, Allah, Muhammed, Buddha, the Dalai Lama, Santa Claus or any of them.
- 3 cups Rolled Oats
- 3 cups Nuts, chopped - I used a combination of Almonds and Walnuts
- 3 Tbsps. Flax Powder
- 1 cup Sweetened shredded Coconut
- 7 Tbsps. or just under 1/2 cup of Baking Cocoa Powder
- 1/2 tsp. Salt
- 1 Tbsp. Vanilla
- 1/3 cup Olive or Canola Oil
- 1/2 cup Maple Syrup
- 1/2 to 3/4 cup Chocolate Chips (I use the Enjoy Life brand).
- Preheat over to 325 degrees.
- Mix together dry ingredients from the oats through to the salt. Add the vanilla extract and then the oil, stirring well to combine. Add in maple syrup, once again stirring to coat everything.
- Once combined, spoon mixture onto a baking sheet lined with parchment paper. Leave clumped together. Do not spread out on the baking sheet.
- Bake at 325 for a total of 30 minutes, stirring it at the 10 minute and the 20 minute mark. When stirring, the idea is really just to fold the outside edges so they don't burn.
- Remove from the oven and let cool for at least 30 minutes and up to overnight.
- Once cool, add in your chocolate chips and store in an airtight container.*
- *My granola stays fresh in an airtight container for weeks.

I keep my chocolate chips hidden in a top cupboard in our kitchen so the husband will forget about them. It mostly works, but unfortunately it works for me too. We’ve had the same bag up there for like 4 months or something crazy.
I love granola with chocolate. I’m also a big fan of TJ’s pumpkin spice granola. I could probably make it myself, but I’m lazy, sooo there’s that.

I love how simple this granola recipe is. You can just quickly make it in between and don’t have to spend hours in the kitchen. Chocolate and coconut is one of my favorite combos. Like Bounty bars π

I have so much love for granola. SO much love that it’s crazy easy for me to make myself sick off it… especially when chocolate is involved. I’ll never understand the whole 1/4 cup serving nonsense. Whoever thought of that clearly never ate granola, because if they did, they’d know it’s impossible to stop at such a measly amount. That or my self-control is just garbage π

Hold me down, this looks ridiculously pleasing. I’ve never been able to consume much granola per say due to my dental issues and poor crackety toofers, but that never stops me from trying. This recipe looks so flavor-punched that I’d be willing to grind it up a bit in a processer, sans chocolate, and then add those heavenly chocolates in after. It’d be a sinfully delicious mush. Hopefully you won’t be offended if I morph the components a bit… The flavors look too good to pass!
On another note, I just discovered I have an aunt and nephew that live in Cleveland!!! I hung out with them last night and I’m overjoyed. Her name is Bunny π a trip to your town is totally possible and I’m gonna bring you goodies from Texas whenever it happens

I love these granola recipes, but I can never get mine to clump. Suggestions for what I’m doing wrong? I leave it all together and don’t touch it until it cools.

Hmm, it’s kind of hard to say without actually seeing it or being in the kitchen with you. Mine does clump a little, although certainly not a ton. I love the mini chips and it’s in fact what I went with in here, although the Hubby snuck in some regular sized ones too. Mini chips was the vision though. Great minds think alike.

Actually I made a big batch of this granola this past summer and brought it to our family vacation. We just so happened to have some Coconut Yogurt too, and the combination of the two were magic. You’re definitely onto something.
