Happy WIAW my sweet little orange cherry oatmeal muffins.
I can’t believe I am officially back for a full WIAW post, and I don’t have anything to say.
I know, it’s baffling to even me. I usually can’t shut up, and now my mind is blank. Maybe you can only talk about one day of food so many times, or maybe I just need a better thesaurus. Or a nap. Or something.
In any event, I took photos of my eats on Monday, so that’s the day I’m going to share with all of you. I’m also really craving Kirsten’s delicious Orange Cherry Oatmeal Muffins, so there you have it. My mind is either blank or filled with dancing muffins. I’m not sure why they’re dancing, but they are, and they are wearing skirts as well; some with polka dots.
Sorry, I digress; I blame my brain; she’s been doing weird things lately (nothing to be alarmed about friends and family). I hear this happens with age.
In any event, let’s give a rousing round of applause to Ms. Jenn over at Peas and Crayons, for hosting our weekly Wednesday fun. Even though she has been down and out, she is just as funny as ever. She talked about marinating her balls yesterday, and I really got a kick out of that. Plus they were smothered in pesto, so that’s another winner. “Pesto balls: I’ll take two please.”
Onto the food (not that those balls weren’t about food). I started Monday morning with some coffee and toasted granola bread smothered in a lovely layer of butter. To be clear, my coffee wasn’t Starbucks. It was either that or a Christmas mug, so Starbucks won….this round.
I also scarfed down my typical banana because no day would be complete without one, and this is my classy banana pose because the two go hand in hand, obviously. Nothing says class like a hoodie or makes me want to sing LL Cool J’s Mama’s Said Knock You Out more. Great, now the cherry orange oatmeal muffins are dancing to hip hop.
Lunch was some sweet potato soup from my grocery store, Nature’s Bin. Yes, I know I made a bazillion soups last week and yet I’m eating a store-bought one come Monday. Oh, the horror. Alright, a bazillion might be a slight exaggerating, I really only made four, but now that my soup stash is fully replenished, I’m not ready to start depleting the reserves.
I also had a spinach salad with a handful of freshly sliced strawberries and a sprinkling of blue cheese, all dressed with a little olive oil and peach balsamic vinegar. The dressing came post photo shoot.
For a snack, I ate some Rosemary Parmesan Drop biscuits I made over the weekend. I proceeded to slather these in butter as well. For me, bread and butter (the real deal) just goes together like Bert and Ernie, Fred and Ginger, and me and some orange cherry oatmeal muffins. If you want to make these Drop Biscuits, stick with the original recipe and then add a quarter cup of Parmesan and some fresh rosemary (one snippet works wonders, in the muffins and on your plate for a little artistic touch).
Dinner was a tried and true classic: the easy man’s dinner (or woman as the case may be) fried eggs and parmesan roasted sweet potatoes, with a side of fresh fruit.
Here, let’s get another look at that ooey gooey good, yolk porn because visual stimulation (and cherry orange oatmeal muffins) is where it’s at today.
Since I don’t want my fruit bowl getting jealous, let’s share another one of those too. Bam, another banana, this time right in the kisser….just how I like ’em.
There you have it; an entire day of food. Hopefully you’ll excuse me while I go make some orange cherry oatmeal muffins. I seem to have them stuck in my brain, and now they are doing the can-can with their cute little muffin type legs. Damn them.
Tell me about a day of your food? Have you been craving anything interesting lately? Have you tried these orange cherry oatmeal muffins? You really should.
kirsten@FarmFreshFeasts says
For the record, your orange cherry oatmeal muffins are better dressed and more vigorously dancing to more interesting music than mine. My are forced to dance to Carly Rae because my daughter commandeers the music and is brainwashed in her weekly sewing class where she listens to . . . Top 40 Radio , though they dance on pretty Polish pottery plates, so there’s at least that over here.
Meghan says
I think it’s because they make my taste buds sing. Although, I am a huge fan of tween pop, including Carly Rae because it makes me feel young. Plus it’s all pop-y and that makes me happy.
Eating 4 Balance says
I’ve never caught my food dancing before, but now you make me suspicious…
I still am using my green reindeer bowl up at school for meals, so I will never judge you for a Christmas coffee mug.
I dabbled in some fresh rosemary this week too. It just makes food look so pretty! But, I have to admit that I generally prefer my food to be spice and herb free as I like to just taste the flavors of the food that I’m eating, not some strong-flavored green shreds. Although that makes it sound as if I don’t like rosemary (I totally do), but still…
Meghan says
You should always be suspicious of your food and the antics they can pull.
I adore fresh herbs in my cooking, but if it helps, the rosemary was very subtle in these muffins. It actually made them very sweet and not herby. Weird, but it’s the second time I used rosemary (although previously with a different kind of cheese) and it made those biscuits sweet too.
Fran@ Broken Cookies Don't Count says
Everything looks delicious, Meghan. Especially love the LL comment…Mama says knock you OUT! Have a great day!
Meghan says
Every time I wear my hoodie sweatshirt, I think LL. Happily too, I might add. Happy WIAW Fran.
sara @ real fun food says
(I’m from virgins who can’t drive – how I found your blog!)
I saw you’re also from Ohio! My family lives in Dayton 🙂
Spinach salad with strawbs, feta, walnuts and balsamic is my staple salad. Love it!
Meghan says
You’re an Ohio transplant. I love it, although we shall never speak of your other site…not in Ohio, no. That would be shocking and inappropriate. But on the other hand, I’m kind of a fan of shocking and inappropriate. It was a great post by the way, and I’m glad you found me back.
Now let’s talk salads: I love a good mix of feta in there and walnuts, well they just give it the perfect crunchy finish. 😉
Khushboo says
Yum eats as usual, especially dinner! I have been all over runny eggs…especially atop of buttered toast- simple yet perfection. Another favorite around here lately is sweet potato with nut butter and a side of grilled chicken…sometimes it’s makes me wonder how eating healthy can be so delicious ;)!
Meghan says
I can’t fathom pitching the yolks. It kind of breaks my heart in a way, especially because they are filled with all the good stuff: flavor, nutrients.
Don’t tell anyone, but I’ve never mixed my sweet potatoes with nut butter of any kind. I know, I’m weird, but it does sound somewhat appealing. I might have to try it one day.
I think healthy eating can be fantastic. I really don’t get people’s aversion.
Deirdre says
those strawberries look beautiful! happy wiaw!
Meghan says
Thanks Deirde. I’m a huge fruit addict. Happy WIAW to you too. Thanks for stopping by.
Jess @ JessieBear What Will You Wear says
I am actually just hardcore drooling over all your pictures. Especially the salad and easy man’s dinner. I’m trying to eat the last of my food before vacation which makes for some pretty pathetic meals…. feed me your delicious food please…
Meghan says
Sometimes the easiest and simplest meals make the most delicious ones too.
Pre vacation clean out the fridge pantry is always weird, but you will be eating like a rock star in no time.
Whitney @ To Live and Diet in L.A. says
Love the banana picture. With the gangster hoodie and serious stare, you look like you’re about to use it as a weapon, haha!
What is granola bread? I am intrigued…
And breakfast for dinner is one of my favorite meals too. And for lunch, and as a snack, and basically every meal of the day.
Meghan says
I like to have some photogenic fun with my bananas….in a good, clean way of course. I think this might even be my third banana picture now. We need to have a blogger’s banana eating contest.
I get all my bread from a local bakery called the Breadsmith, although I think they have locations elsewhere. They describe granola bread as “A soft blend of oats loaded with crunchy almonds, pecans and the natural sweetness of honey – just like your favorite granola, but in a loaf!” It’s a mixture of whole grains and has oats, sunflower seeds and sesame seeds. It’s absolute delicious and their ingredients are completely sketch free. It’s on the pricier side, but worth every single penny.
Who doesn’t love breakfast. It really is the best meal.
Giselle@myhealthyhappyhome says
The strawberries in your salad and fruit bowl look delicious! Well, all your eats look really good but I’ve been all about strawberries lately. I haven’t tried that muffin recipe but it sure sounds good!
Meghan says
You should try Kirsten’s muffins. I made them today; I couldn’t take it, and they are melt in your mouth good. I bet you could even use strawberries instead of cherries in them.
MassachusEATS says
Yum! The granola bread looks so crunchy and delicious – I’m drooling over it right now! Never thought I’d see the day where I drooled over toast but here we are.
Meghan says
It’s the butter, although the granola bread really is fabulous. I bought my coworker a loaf one time because I wanted her to experience it too. She, along with her husband and two kids, devoured the entire loaf in one day.
Jess says
Love strawberry in salads—I think I need to go buy some now because I have some feta that would be a perfect addition…
Gorgeous photos and gorgeous foods! Heh, yolk porn…
Meghan says
Strawberries and feta, along with a little balsamic. Flavor perfection.
Thanks for stopping by and saying hello.
Kaitlin says
Boy those berries look amazing! I can’t wait to get my hands on some of those 🙂
Meghan says
I know. I adore fruit, and I can’t get enough. Hopefully you can get your hands on some soon.
Thanks for stopping in.
Melissa says
Between you and Kirsten, you’ve got me craving muffins something fierce! But only if they’re going to dance in my head…otherwise why bother? The eggs and sweet potatoes look so pretty together! Breakfast for dinner (or brinner, if you will) is always a good option.
Meghan says
Brinner is so easy, so I couldn’t resist. Those muffins are Kirsten’s recipe and I made them a second time now and can’t wait to do it again. They just melt in your mouth. I absolutely recommend them, especially because they dance in my mind.
Sarah @ The Smart Kitchen says
Oh my, the LLCoolJ reference just about knocked me OVER (laughing…or something). 🙂
Also, I need some help learning how to properly fry an egg. Please come teach me. [After you make those muffins, of course.]
Meghan says
I would be happy to teach you my egg frying ways, so long as you reimburse me in some of your yogurt concoctions or at least your 10 layer Greek dip, which I still think about.
In the meantime, to perfectly fry an egg, you get the skillet going on medium heat. Add a dollop of your butter of choice. Let it melt and get hot. It should be bubbling. Crack you egg into the skillet. The closer the egg drop, the less radius it will cover. Feel free to push the egg white back to center with your spatula…really show it who’s boss. Cook the egg almost completely on one side. This will take a minute or two (not very long if your skillet is hot enough). The non-yolk part should be almost completely white, except the very top, which will still be a little clear (gross, but don’t worry we’ll take care of it). The top half of your yolk should still be liquid-y as well. Once you have reached this point, flip your egg and let cook for only a very short time on the second side. Maybe twenty to thirty seconds. Flip onto your plate (or toast or salad or pizza or your vehicle of choice) so the second side is now facing up. Bust open the yolk with your utensil, all while singing Mama said knock you out. Huh!
luv what you do says
Those muffins look amazing! I will have to add them to my baking TODO list (for after Passover that is). I love your attractive sweet potatoes. They are the best to eat breakfast, lunch, and dinner!
Meghan says
You absolutely should. I’ve made them twice now, and I think I’m in love.
Nicole @ Fruit 'N' Fitness says
Those eggs look amazing!
Meghan says
Thanks! I love a good fried egg.
Sunnie@ModernGirlNutrition says
That dinner is right up my alley! Parm roasted sweet potatoes? Genius!
Meghan says
I know you love a good sweet potato, Sunnie.
Kat says
I am drooling here. I love strawberry-banana salads, and love adding strawberries to my greens…heck, I love strawberries, just made strawberry muffins!
Meghan says
Oh strawberry muffins sound delicious. I adore strawberries and can’t wait to get some local ones soon. Or maybe not so soon, but whatever a girl can dream.
rebecca @ Blueberry Smiles says
granola bread sounds sooo good!
Meghan says
Granola bread is the bomb. Seriously, it’s like a meal in itself.
Brittany says
Your meals are so purrrdyyy!!! Such wonderful presentation. Yum to those muffins, did you share any with Max? You know if you share, he won’t feel the need to steal. I kid I kid!
Meghan says
I didn’t share any with Max, although he did try to steal one. Dirty, dirty pussy cat. He’s also “big boned” so he gets plenty of food. I was actually concerned about his petty theft ways and took him to the vet not too long ago. A bunch of blood work later proves he’s physically fine. It’s just all in his head. Crazy pussy.
Miss Polkadot says
Muffins dancing and even with polka-dotted skirts? Now if that wasn’t a final call for you baking them I don’t know what would have been ;).
Even though I’m not much of a salad person yours looks fantastic. Fresh strawberries …
Meghan says
Thanks. The muffins were like visions of sugar plums dancing in my head.
Jessie says
Nothing wrong with ending a day with some breakfast foods 🙂 🙂 I had randomly been craving a donut the other day, and lucky for me we had a huge box sitting around my parents house. I didn’t just eat one, I had two.. and man were they delicious!!!
Meghan says
Hey welcome back! Nice to see you again; I’m glad you had a great trip. The Hubby and I used to have a donut ritual where we’d polish off a dozen, between the two of us, after every vacation.
Heather @ Kiss My Broccoli says
Hahaha! As always, you had me CRACKING up this entire post! But damn you for teasing me with those muffins…and not even showing me a picture?! That’s just cruel! Wanna know what else is cruel? The fact that all the damn strawberries in town look like crap! How is it that almost every single food blogger has gorgeous plump red steebies and all we have here is yellow, shrivel-y pathetic excuses for summer fruit? You guys took them all, didn’t you? It’s a frickin’ strawberry conspiracy I tell ya! May the seeds get stuck in your braces! Wait…I didn’t mean that…I love you! 😉
Meghan says
My strawberries may be gorgeous and plump, but they were shipped here from California and ripened in the back of some dark seedy truck, so while they are good, they are not great and they certainly aren’t local.
I could not stop thinking about those muffins, but don’t worry a picture is on its way, because I made them right after typing up that post. They are ridiculously good and gone already. By the way, you have to soak the oats for at least thirty minutes and even up to overnight if you choose. I wanted to give you a heads up for when you make them, and you should make them.
P.S. I found a piece of granola stuck in my braces the other day. I think it was there for hours too and nobody told me. Bastards. All of them.
