The Monday Rundown: The Memorial Day Edition

Since yesterday was Memorial Day, my office was closed and I got to enjoy a nice long weekend. Wouldn’t it be nice if all weekends were three days….A girl can dream.

The day started with “Breakfast in the Park.” Every Memorial Day and Labor Day, the Hubby’s family, along with two other families get together, a tradition which has been taking place ever since I have known the Hubby (going on sixteen years now!).  All three families grew up together, and the parents, the kids and now grandkids are all similar ages, so they are basically lifelong friends.  Everybody brings food to share, and our contribution was homemade granola (we made a new batch Saturday morning), along with vanilla soy yogurt and fresh blueberries. I also indulged in a lovely frittata prepared by someone with similar food views. It was packed full of veggies and topped with goat cheese and arugula, and the best part; I got to take leftovers home for lunch (Bonus!).

(Yes, that’s dirt all over my face, just like a mud mask.  Moving mulch is fun, especially when it’s 90 degrees outside).

I think the final results were worth a little dirt, but you can decide for yourself.

Thankfully, we were invited to dinner at a friend’s house. The company and the food were lovely, but the best part was having someone else prepare it.  After all the yard work this weekend, I’m not sure if I could have put a meal together.  I didn’t want to show up empty handed though (I do want to be invited back), so I quickly threw together “Fiesta Lime Rice,” another recipe from Pinterest (original source: http://www.skinnytaste.com/2011/04/fiesta-lime-rice.html). I did switch up the ingredient quantities, so I was using an entire can of beans, and a whole bag of frozen corn.  For me, this was easier than splitting them up and saving a half can of beans for later.

The dish was quick and easy to make, plus since I upped the volume, we could have fed a small army. The leftovers will be the filling for the Hubby’s lunch wraps this week.  He’s happy.

    I have to try the fiesta lime rice- that recipe sounds fantastic! I am going to make the granola too- can’t wait!!!
