Cinco De Mayo Recipe Love

It’s been awhile since I’ve done a Thursday post, but I wanted to share a little link up love with all of you in the form of Jessie Bear’s Together Tuesday.

Together Tuesday

The concept behind this party is to share recipes you’re digging at the moment, and I mean that in the figurative sense of the word. Otherwise it’d be weird.

Since I’m gearing up for hosting a Cinco de Mayo themed baby shower on Sunday (yes because nothing says babies quite like booze and a spicy palette), I thought I’d share some Mexican themed food, which really caught my eye and is a contender for Sunday’s menu.

Yep, it’s official. I’m salivating and my taste buds are starting to sing. It’s going to be a very Cinco de Mayo themed baby shower indeed. The only thing missing is dessert.

    Ok, so it’s 6:30 in the morning and I want ALL of this, especially the quinoa and corn salad…that looks so good to me. I’m a Mexican food lover and love any time a bean gets wrapped in a tortilla! I need to make some of these. Thanks for sharing them, Meghan!

    It goes together and sits for a while before serving, so it would be good for a busy event like a spicy shnockered shower.

    Excellent choices–I bought my avocados yesterday so they will be ready to guac!

    The idea of a fajita bar is great so that everyone can pick what they like! Oh, and those sweet potato flautas! Whatever you make, I’m sure it will be delicious. Too bad that the mother-to-be won’t be able to have that awesome-looking lemonade. Maybe you could substitute carbonated water for the tequila or something?

    My personal favorites would be the dulce de leche cake, Mexican chocolate ice cream, cinnamon churros, or tres leche cake. Yum! 😀

    All of those look like fantastic dishes (I LOVE Mexican food!) I don’t have lot of Mexican dessert recipes up my sleeve… but I do have these key lime bites that I have been meaning to try (and you can never have enough lime with your Mexican food): http://www.pure2raw.com/2012/03/mini-coconut-lime-cream-cakes/

    EVERYTHING looks amazing and you had me hungry early in the morning! I have an AMAZINGLY DELICIOUS recipe for a Sopapilla Cheesecake Pie that is SUPER easy to make and ALWAYS a crowd pleaser–its not so “whole” or “organic” though. And the only thing that makes it “Mexican” is it calls for “Mexican vanilla extract” (and I haven’t found that anywhere so always just use regular vanilla extract)–but again, AMAZINGLY DELICIOUS! LOL!! Let me know if you want the recipe! 😉

    Just wanted to comment on how much I love your banner! I hate when people ask me why I’m dieting because I choose to have some veg on my plate. I definitely think you should make some of that delicious looking Strawberry Lemonade 😉

      Aw thanks. That means a lot because the photos in the banner are actually all my own pictures. I also love the way I eat and I think healthy food is sexy. I’m absolutely making the strawberry lemonade. 😉

    Up until yesterday, I didn’t even realize it was Cinco De Mayo this weekend.. is that horrible??!!! Thanks for all these yummy recipes. I sure do wish I were around my best friend right about now (she’s hispanic, but i just call her mexican.. i mean they all look the same right? Ha Ha) & enjoying her cooking!

      I actually have friends who are Mexican, Puerto Rican, Columbian and they would definitely disagree.
      Cinco de Mayo is on Sunday so you still have time to get with the festivities.

    This reminds me of every party for Spanish class in school, when everyone was quick to get all over their appetizer, side dish, and entree contributions, but the only Mexican dessert anyone could think of was Mexican wedding cakes, which are delicious, don’t get me wrong, but you know, let’s get some variety up in here.

    Tres Leches.

    BEST CAKE EVER.

    I have no link. But figure that out and then cover it in whipped cream and sprinkle it with those little silver ball sprinkles that are actually sugar. That’s how I ate it in Panama. Which is not Mexico. And therefore has nothing to do with Cinco De Mayo. But they don’t really care about Cinco de Mayo in Mexico anyway, so it doesn’t matter.

    OR you could throw a horse-shaped wrench in the whole thing and celebrate the Kentucky Derby with Chocolate Bourbon Pecan Pie.

      Where can I find these “little silver ball sprinkles that are actually sugar?” I must have them, but I fear they would not be safe around me.
      I’d also like to find this horse-shaped wrench you speak of; I’m fascinated.

    I have been looking forward to Sunday because it I will finally have a day to do laundry and go grocery shopping and keep forgetting that it is Cinco De Mayo. I will have to remember to celebrate too. Bring on the guacamole!

    Ok, so I know I’m late on this since but I just have to say that one of my favorite Mexican “desserts” is just some simple baked cinnamon tortilla chips. Absolutely perfect with a bit of ice cream! http://www.epicurious.com/recipes/food/views/Cinnamon-Sugar-Crisps-233270
