No Bake Energy Bars

Earlier this week, I blogged about the importance of snacking, and I shared a recipe for Roasted Candied Almonds. If you liked those, you’ll love this next recipe.  It’s for Energy Bites, which taste like a little piece of heaven, are a great substitute for a candy bar and, most importantly, the Hubby’s favorite.  I pretty much make a double batch everytime because I can’t keep up with the rate he comsumes them.  Usually, I’m smacking his hand away and making him wait until I’m finished before he can dig in.  And no baking involved.

Chock full of nutritional goodness, these no bake bars are a cinch to make and even easier to eat.

No Bake Energy Bars or Balls

An energy bar chock full of oats, nut butter, coconut and chocolate, designed to fill you up and keep you going.

Ingredients
  1. 1 cup (dry) oats (I buy these in bulk now)
  2. 1 cup unsweetened coconut flakes
  3. 1/2 cup natural peanut butter
  4. 1/2 cup ground flaxseed or wheat germ
  5. 1/2 cup chocolate chips (I use Enjoy Life’s Mini chocolate chips, which are dairy and soy free)
  6. 1/3 cup honey
  7. 1 tsp. vanilla
Instructions
  1. Add all dry ingredients (oats, coconut, flaxseed/wheat germ, chocolate chips) together in a medium bowl and mix well. Stir in vanilla. Add in peanut butter, thoroughly incorporating it into the dry mixture. I find a large fork works well for mashing and mixing the ingredients together. Add in honey fully incorporating it into mixture.
  2. To Make Balls: Let chill in the refrigerator for half an hour (This is where the Hubby gets hit). Once chilled, roll into balls of 1″ in diameter, or whatever size you like. You can store them in an airtight container and refrigerate for up to 1 week, although ours don’t normally make it this long.
  3. To Make Bars: Take mixed ingredients and press into an 8 by 8 pan lined with wax paper. Refrigerate for thirty minutes. Remove from fridge and cut into bars.
  4. Store energy balls or bars in fridge.
Notes
  1. There is one downside to these energy bites; I’m not gonna lie. They are a real son of a b!tch to form into balls, which is why I make them into bars. Should you go the ball route, wash your hands often (which you really should be doing anyways) while forming the balls, and it will prevent stickiness. I can’t believe I even typed that sentence, but double entendres aside, go nuts with this one.
