As a self-professed grocery cart creeper, I find What I Ate Wednesday appealing in a voyeuristic way.
It’s rather nice to see what other folks are ingesting on a daily basis, without being called a stalker or brought down to the station to answer questions; not that I would know anything about that.
Here’s the thing. I dig What I Ate Wednesday because as much as I draw inspiration from blog recipes, I find it even more motivating to see so many different meal ideas converge in one place, at one time. It’s the ultimate dinner party, with breakfast and lunch making their way to the feast as well. No stone is left unturned, and no meal is turned away. In fact, the more the merrier. You should bring all your eats because if our lovely hostess finds out your withholding food, there’s a good chance she might come after you with her whisk. I hear she can crack that thing; in a good way, of course.
Without further ado, I give you my Sunday eats.
First breakfast was a cup of coffee and a bucket of water, followed by just over an hour of Vinyasa Yoga. Oooommmmm.
Second breakfast was a ginormous smoothie which I was kind enough to share with the Hubby, on account of still feeling all zen. In the blender, we have frozen pineapple pieces, two bananas, a boatload of strawberries and blueberries with a dash of Spirulina, Bee Pollen and Flax Powder.
Lunch came an hour or two later and included a whole wheat toasted veggie pita with a side of rice and beans from Liquid Planet. This is the kind of fast food I adore.
Later in the afternoon, I had another cup of coffee because I have a caffeine addiction and I just so happen to like the stuff. Also there was water; there’s always water.
Dinner was a bowl of my newest soup creation: Potato Broccoli Pesto. As much as I wanted to inhale two bowls, I showed restraint so I could photograph the leftovers the next day.
It’s also why I paired my soup with two Butternut Squash Cheddar Drop Biscuits. A girl’s gotta eat.
Not to be completely outdone, dessert was a few squares of this Uganda Chocolate Bar, I was fortunate enough to win in a blog giveaway. Hello Cocoa indeed.
I also managed to sneak one Banana Blueberry Buttermilk Soaked Oat Muffin into my mouth, except this batch was a gluten-free version, made entirely with oat flour, just for kicks.
This was a pretty solid fruits and veggies day for me. Here’s to keeping it up and drawing motivation from other What I Ate Wednesday contributors. Happy Eats.

Forget recipe books and all that jazz, bloggers are definitely my go-to for meal inspiration! Even though I rarelyy can follow a recipe as it is listed, other bloggers’ recipes are definitely a great starting point. Potentially silly question- what liquid do you use for your smoothies? Love the idea of adding in pineapple – must try that soon! Oh hey whaddya now- blogger inspiration :)!

For the most part, I use juice in my smoothies, OJ or pineapple juice, which is supposedly a faux pas. Too much sugar. I figure I eat enough good whole foods a little juice, especially the all natural kind, isn’t going to hurt me. You could probably get by with water and be alright though too.

Alright, what’s the deal with spirulina? I hear it tastes like garden sludge but makes you feel like a million bucks. I’ve always been tempted to try one of those fancy schmancy add-ins (spirulina, bee pollen, and the like) but have only ever tried chia and ground flax. I’m feeling the urge to change up my smoothie game a bit…I guess this is my latest in blogger foodspiration!

God’s honest truth: I had a free sample packet of spirulina from last year’s Blend Retreat I found in the pantry. Hence the addition to the smoothie, where I couldn’t even taste it.
I started the bee pollen a awhile back after hearing great stuff, and I can’t say I feel any differently. I bought a pound of it though so it’ll keep going in my smoothies until it’s gone. I’m not planning on replacing it. Also bee pollen is suppose to be great for folks with seasonal allergies. If you have them, I’d give it a try.
The flax powder I love and I’ll be sticking with that. It gives me extra omegas which is good since I don’t eat fish.
You’ll have to tell me if you try either of them.

Love the look of those muffins! I realized yesterday I have 2 bags of frozen blueberries and was thinking about doing muffins, however my oven is being finicky and I might have to skip that. You are just like my husband with the coffee – always an afternoon cup, or 2. I like to have it strong in the morning and then call it a day.
In terms of inspiration, I’m actually more inspired by people’s food photography lately than the actual food – I’ve been putting off getting into “real” food photography but I’m creeping closer with every awesome recipe I see. Particularly Amanda constantly blows my mind with her food pics. If I could get half my pictures half as good I’d be satisfied!

I know. Amanda’s pictures are gorgeous always. My advice would be to practice, practice, practice. Also, use natural light whenever possible.

The muffins turned out pretty good actually. I was really pleasantly surprised. I think I’d like to test them one more time before adding an update to the recipe, but I was impressed. Oat flour for the win.

the most recent online person that inspired me to cook something was Alex Jamieson. i did one of her online health coaching sessions a few years ago when i was in a rut, and i’ve been a fan and online friend ever since, and actually way before that. last month she posted a ‘cleansing’ soup with turnips, potatoes, leeks, and garlic, and some other jazz that i can’t remember.. basically a pot of love! i made that sh*t and it was da bomb. i pureed it, and added in fresh leaves at the end. of course i did.
i tend to be inspired by words and attitudes these days. recipes are like candy. i can savor all sorts of recipes. i covet them, especially your soup and those muffins. damn it all looks good. when i get home i get inspired by what is in our pantry – like playing ‘chopped’ at home.
i’m babbling again lawd stop me!

Playing chopped at home is how I cook and how most of my recipes come about. It’s all about what’s there and on the verge of going bad. Surely, I can’t let the veggies win.

I feel like it’s been ages and ages since I’ve done a WIAW, but you make me want to start up again. Or at least do a “Day in the Life” post with some food thrown in. See? There you go inspiring me at 9:45 on a Wednesday morning. And I legit believe that I’d take all sorts of delight in being a cashier at a grocery store just so I could look at what people buy all day long. I’d probably get fired for trying to dish out nutritional advice, though π

I want all your food in this post, those butternut squash biscuits and the veggie pita. Why is it that pitas always taste 100x better when I buy them versus making them myself? Same with sandwiches. It’s a total mystery.

I am with you 100% except one time this past Fall, I made a restaurant quality sandwich at home. It was epic, and I used the Panini Maker so I think that’s the secret. A Panini maker or sandwich press. You need to invest in one of them.

The muffins with all oat flour were way better than I thought they’d be. A little lighter and less dense if that makes any sense. I had to increase the oat flour and I want to try again and tweak the cooking temp and time, but overall I was seriously impressed.

i made a butternut squash and rice salad from @iowagirleats which was probably the best thing this week..additionally, there was a granola bar (chocolate chip + pretzels) I made from another blogger which didnt turn out like the recipe, i m going to have to retry it again…the idea of your smoothie sounds wonderful..
