WIAW: The Keeping It Simple Edition

I feel like I’ve been doing a lot of talking lately.

Maybe it just feels that way because my brain seems to be running on overdrive. I’m guessing my social butterfly status has something to do with it. Us introverts need our down time.

Or maybe I’m just looking to get out of an introduction today.  

Whatever the reason, I’m keeping my What I Ate Wednesday super simple, and I’m sharing my Monday eats, without a lot of fuss and certainly no muss. A big thank you goes to our lovely hostess with the mostess, Ms. Jenn at Peas and Crayons.

Breakfast was a not pictured cup of coffee, followed by two fried eggs and two pieces of English Muffin bread. Lunch was a slice of leftover Strawberry Rhubarb Upside Down Cake, some carrots and celery and the last of my Ramp Pistachio Pesto Hummus. There was another not pictured cup of coffee in there and a slice of sharp cheddar cheese. Dinner was three slices of a Greek Olive Salad Pizza, sans shrooms, and lime water was my companion for the day, next to the cats of course.

    Your pizza looks amazing! I could not eat ‘just 3 slices’ ooooh no no no it’s the whole pizza for this piglet!
    What do simple meals look like for me? Well they vary but generally it’s a bowl with everything I’ve got in the fridge thrown in, veggies and hummus and oat’s..yeah…love oats..
    Whilst we are talking food..today I found out that a young man we employed nearly a year ago brings the same lunch every single day..one year of the same lunch..darn!

      Now that’s consistency and dedication with a dash of crazy thrown in for good measure.

      I love veggies and hummus. Easy and delicious.

    That hummus looks amazinnnnnnnng! anything with pesto and I love. I’m slightly allergic to the tahini in regular hummus but I can never help myself so I end up itching for a couple hours so I can eat hummus haha.

    Strawberry Rhubarb Cake…..geeeeez. I want it NOW!! And there – IN your garden!

    Yesteday, I had a ridiculous huge batch of giant prawns and quinoa. Seriously, I thought it wouldn’t end but I didn’t mind.

    Simple meals are all things baked. Baked chicken, Sweet Potato Fries, Frittatas, Fish, Casseroles, Oatmeal Bakes…..It gives me time to do other things while it bakes, like drinking. Water, of course, or what did you think.

      I was thinking water…alongside a glass of wine. I love sticking things in the oven, going to do something and coming back an hour later to a wonderful meal. If only all things were that simple. πŸ™‚

      My garden is no lakefront view, but you’re welcome to eat cake there anytime.

    Simple for me means ordering in. Which I did yesterday in the form of sushi. I had some leftover over which I just ate at 10:00 am. I don’t know if that’s sad, gross or something to be proud of lol

      Ordering in is definitely another version of simple. Chipotle’s another good option. πŸ™‚
      It’s something you should be proud of. Obviously, even if it is a little gross. Oops, did I say that?!

    Simple meals are the best…especially when eggs are involved. I had some haddock last night which was simple as it gets- unwrap, put in foil, bake for 10 minutes, and devour πŸ™‚

    A slice of cake for lunch… I’m very much down with that. And pizza for dinner? Can I come over tonight?? I have a few hours until dinner with no idea what I want to make or eat… And if I don not think of something soon, it’ll probably end up being pancakes or cereal πŸ˜† But simple is my favourite… Both because it’s easy to make, and because it lets you taste all the individual flavours.

    That pizza looks/sounds amazing! Sometimes simple is best and you can never go wrong with another cup of coffee at lunch. Bonus points for having it with a piece of cake.

    Coffee, cake, and one heck of a pizza… this looks like a deliciously simple day to me πŸ™‚ When I go simple I usually just end up snacking all day (veggies, hummus, crackers, cheese) or throwing things on a potato.

    Can we take a moment to appreciate the mason jar’d beverage?

    Next week you’ll be hanging out at Starbucks with your egg white and cheddar wrap. Actually, I know you have more common sense than that. The cheese is like plastic- even though it isn’t low fat.

    Simple would be my standard evening meal- a protein, roasted spuds and roasted cauliflower.

      I wouldn’t touch an egg white and cheddar wrap with a ten foot pole. Ha!

      Toss in an egg for the protein and your simple meals are right up my alley.
